Sportsman Channel Hosts to Cook Feral-Hog for Homeless Veterans

Feral hogs can be a problem in North Texas, even in a city as big as Dallas. Brian Quaca, a Mexia native, has been doing something about them.

Actually, Quaca has done much -- he is so killed at capturing and/or killing the wild hogs that he has earned the nickname "Pig Man," and he stars in a similarly named TV show on the Sportsman Channel.

On Tuesday, Quaca and Scott Leysath -- star of Sportsman Channel's The Sporting Chef -- will be in Fort Worth to put Quaca's work to use for a good cause.

As part of an anti-hunger initiative called Hunt.Fish.Feed, founded in 2007 by Sportsman Channel parent Outdoor Sportsman Grouop Networks -- the hosts are on a national tour that visits cities and serves meals to the homeless. In Fort Worth, they're scheduled to serve dinner Tuesday to approximately 80 homeless veterans at the Patriot House shelter, 2320 Cypress St. in east Fort Worth. Charter Communications is also involved with the event.

Quaca donated 125 pounds of pork for the event, and when we say pork, we mean feral hog.

The menu will include Wild Hog Chile Verde: tender cubed feral hog, simmered with onions, roasted Anaheim peppers and tomatillos. It will be served with warm flour tortillas and topped with diced tomato, onion and cotija cheese. Also on the menu is a jicama, bell pepper and citrus slaw, and black beans and grilled corn with a mild tomato salsa. Dessert will be a brownie with milk or juice.

The meal will be served from 6 to 7 p.m. Tuesday at Patriot House. State Sens. Konni Burton, R-Colleyville, and Kelly Hancock, R-North Richland Hills, are also scheduled to attend. ___
